Puff pastry soaked in mango and lime syrup, lime sorbet and mango sorbet

Fresh ice cream takes part in the end-of-year festivities in an ice cream log imagined as a cake. As a counterpoint to the mango-lime ice cream, Pierre Hermé has created a delicately soaked soufflé biscuit, both spongy and light, whose texture enhances the sweetness of the mango sorbet, randomly underlined by the lively flavours of the lime.

Storage and consumption advices

Keep in the freezer in its tin until consumed. Place in the fridge in its tin 30 minutes before eating. Cut into sufficiently large slices using a knife that has been dipped in hot water and wiped dry.
