Imitating the crystalline system and opaque reflections of certain minerals, the signature log promises another voyage. Pierre Hermé invites the flavours of the traditional gazelle horn, playing with tastes and textural contrasts. The almond flavour predominates, carried by the cream, orange blossom marzipan and amlou. The honey notes, candied orange and orange blossom aromas are then chiselled into the texture.

Storage and consumption advices
Keep in its tin in the fridge until ready to eat. Present the log to the guests and remove the decoration before cutting. Cut into sufficiently large slices using a knife that has been dipped in hot water and wiped dry.
