The must-have Infiniment Amande galette opens the Epiphany ball. In it, Pierre Hermé celebrates all the facets of the dried fruit's flavour. The almond cream, enriched with roasted almonds, is wrapped in a golden puff pastry that's as crisp as you could wish for.

Storage and consumption advices
Store at room temperature. The Galette can be eaten warm or at room temperature. To eat warm: preheat your oven to 150°C and put the galette in the oven for 15 minutes. Leave to cool for about 15 minutes before serving.
