The polymorphic aspect of the exceptional log fascinates. Like a precious crystal, Pierre Hermé sculpts its contours. On a sparkling base of dark chocolate, the log is revealed as if faceted. Pierre Hermé plays the score of pure Ecuadorian chocolate, Hacienda Eleonor, and dark wheat, juggling their bitterness. As a counterpoint, the saline note of soy salt is revealing. The crisp texture of the shortbread dough and buckwheat praline, and the soft, supple texture of the chocolate cookie, contrast with the unctuousness of the chocolate cream and the lightness of the chantilly dotted with soy-salt chocolate chips.
