A singular apple tart where the almond notes of the orgeat syrup combined with an almond nougatine upset the acidic balance of the apple in a game of complementary flavors. Pierre Hermé also plays with contrasts: lightly cooked apples to keep their firmness, crunchy dried fruits - cedar pine nuts and walnuts - soft grapes and a wonderfully crunchy nougatine.
