Pierre Hermé's reinterpretation of a great French pastry classic. The velvety apricot blends with the liquorice notes of Okinawa black sugar to bring out the ripe fruit flavours. In the background, a few pieces of soft apricot and a gourmet almond cream temper the acidity of the freshly cooked fruit just right.
